Cod Roasted With Olive Tapenade

In a food processor, pulse 1 cup pitted kalamata olives with 2 peeled garlic cloves, 1 small onion, 2 anchovies and 2 tbsp tomato paste until almost smooth. Place 2 large cod fillets  skin side up in an oiled baking dish. Mound the tapenade on each piece of fish and roast in a 375 degree oven for 20 minutes.

Serve with mashed potatoes or rice and steamed green beans.
